Fresh Harvest Potato Salad

I finally had my first harvest from the garden. There wasn’t much to harvest considering that things have only been growing for less than one full month. My first harvest consisted of fresh dill weed and green onions.  I needed to use them for my potato salad.

Unfortunately my potatoes were store bought, but I do have potatoes coming up for this year also. 

Potato Salad

5-6 medium to large Russet potatoes skinned or as many smaller red New Potatoes as you want to use unskinned

5-6 green onions including green stems

About 10 small leaf stalks of Fresh dill minced

(Optional ingredients)

2-3 hard-boiled eggs chopped

Sweet Pickle Relish to taste.

Dice the potatoes into bite size pieces and boil until tender but not falling apart.

Slice up the onions and the stems

Finely chop the dill and mix with the onions.

Once the potatoes are cooked and ready, drain and let cool then add in the onions and dill.

If you want to add the optional ingredients then do so before adding the dressing.

My dressing depends on if Keith is helping or not. If he’s helping, then usually we only use a ½ cup or so of Miracle Whip and nothing else. But I like to add a bit more ingredients. I usually add a couple teaspoons of Honey Mustard and a touch of season salt.
